Weekend Breakfast Brunch

At the weekend I like to treat myself to a full breakfast, complete with eggs, bacon, chorizo, black pudding, whatever takes my fancy really.  This dish brings them altogether into one plate of delicious food.  You can substitute in any of the typical breakfast ingredients you like (if you prefer sausages, mushrooms for instance)

Ingredients (serves 2)

6 eggs

4 rashers of back bacon

6 small cooking chorizo sausages

200g morcilla (Spanish black pudding)

5 small potatoes

1 tomato

Olive oil

Method

Peel and thick slice potatoes, par boil for 15 minutes.  Put bacon onto baking tray and into the oven.  Cut up the cooking chorizo into thick slices and cook in pan (no oil needed at this stage).  Once cooked and potatoes are softish, add potatoes and black pudding and a bit of olive oil.  Cut up the cooked bacon and chop tomato and add to pan.  Whisk up the eggs and season.  Pour egg mix over the potato/chorizo/bacon etc combo.  Once the sides of the omelette start to look cooked pop under a grill for five minutes to cook the top.

Serve. Eat. Enjoy!
