The old superfood, kale may be being replaced by other more glamorous superfoods like avocados and broccoli(!!), but it is still a winner in my house and that may well be because of how I serve it up. No boring boiling for any kale that comes through my door, oh no! Kale deserves something special (if only so my OH will eat it without complaining!). So for my glorious, quick and easy kale recipe look no further:
- 1 tbsp Coconut oil
- 2 garlic gloves
- half lemon and zest
Wash the kale, this is important even if it says washed on the bag because we want a bit of liquid to help keep the kale moist when cooking. Heat up coconut oil in a wok or a large frying pan (large enough to hold the quantity of kale you need and with a lid). Add the kale and STAND BACK, the water residue can cause spitting at this stage. Add lemon zest, garlic and salt and let the kale get nice a crispy (takes about five mins). When the kale has reduced in size a bit and looks crispy on the edges put the lid on to encourage a little bit of steaming. (We are not trying to make kale crisps here, just crunchy tasty kale to accompany the main protein in your meal). After a couple of minutes take lid off and serve with a squeeze of lemon.
The kale will taste amazing! (if you like coconut that is!)
