Sometimes I need food quicker than quick, and I want lots of it and it has to be no carb in the evenings. Tall order? Not with this delicious lemony prawns courgetti!
Ingredients (serves two)
- 200g fresh prawns
- 250g courgetti
- 100g spinach
- Sprig of dill, chopped
- Sprig of flat leaf parsley, chopped
- Chives, chopped
- Chilli flakes
- Coconut oil
- 3 cloves garlic, chopped
- Half a lemon
- Butter, knob thereof
Heat coconut oil in a wok or large frying pan and thrown in prawns, garlic, seasoning and chili flakes. Cook prawns until pink then add courgetti and cook for a further 3 minutes, wilt spinach on top. Add all chopped herbs, capers, lemon juice and butter to make the yummy sauce.
Eat. Enjoy. Feel good about yourself!
