Lemony Prawns Courgetti No Carb Quick and Healthy Recipe

Sometimes I need food quicker than quick, and I want lots of it and it has to be no carb in the evenings. Tall order? Not with this delicious lemony prawns courgetti!

Ingredients (serves two)

  • 200g fresh prawns
  • 250g courgetti
  • 100g spinach
  • Sprig of dill, chopped
  • Sprig of flat leaf parsley, chopped
  • Chives, chopped
  • Chilli flakes
  • Capers
  • Coconut oil
  • Seasoning
  • 3 cloves garlic, chopped
  • Half a lemon
  • Butter, knob thereof

To make:

Heat coconut oil in a wok or large frying pan and thrown in prawns, garlic, seasoning and chili flakes. Cook prawns until pink then add courgetti and cook for a further 3 minutes, wilt spinach on top. Add all chopped herbs, capers, lemon juice and butter to make the yummy sauce.
