As the weather hots up what is a girl to do when maintaining a healthy eating lifestyle? Make NICE cream that’s what! This recipe comes from Helen at BodyHappy (check out her instagram!)
Main Ingredients (serves four)
- 4 bananas, skinned, sliced and frozen
- Blender (a nutribullet/ninja/vitamix or hand blender will do)
Variations:
Blueberry heaven
- 2 frozen sliced bananas
- Handful of frozen blueberries
- 50ml aka a splash of coconut milk
Black cherry gateux
- 2 frozen sliced bananas
- Handful of frozen cherries
- 50ml aka a splash of coconut milk
- Scoop of whey protein powder, chocolate flavour or chocolate peanut butter flavour (!!!)
Fruit frenzy
- 2 frozen sliced bananas
- Handful of frozen blueberries, cherries and raspberries
- Spoon of natural Greek style yoghurt
- 50ml aka a splash of coconut milk

To make:
Put all ingredients in a mixing bowl or the blender jug. I tend to pour the coconut milk in last over the powder to avoid powder backsplash! Blend. It may be a little challenging to start with, especially when using a hand blender, but after about 30 seconds the bananas start to mush and you see the ice cream consistency emerging. Give it a good old blend. Some recipes suggest freezing again once blended, but
